15 minute Shrimp and Veggies – Stir Fry
Ingredients:
1 lb shrimp, peeled and deveined
3 tablespoons vegetable oil
1 onion, diced
2 cloves garlic, finely minced
1 inch knob ginger, finely minced (optional)
3-4 tomatoes, diced
8 oz cremini mushrooms, sliced
1 green bell pepper, diced
For the sauce:
¼ cup soy sauce
1 ½ teaspoon honey
2 tablespoons rice vinegar
Garnish & Serving options:
Green onions
Sesame seeds
Cilantro
Or
Avocado
Chipotle peppers in adobo sauce
Cilantro
Monterey Jack cheese
Tortillas
Sour cream
Tortilla Chips
(If using some of the Mexican style garnishes, I’d suggest to remove the ginger!)
Directions:
In large pan, add in the vegetable oil and heat to medium high. Cook the shrimp until pink, curled and fully cooked through. Remove from pan and set aside.
Add in the onions and cook until translucent. Then add the garlic and ginger if using and cook for 30 seconds or until fragrant. Add in the mushrooms and cook until slightly browned. Then add in the bell peppers and allow to cook until softened.
Mix up the sauce ingredients in a small bowl. Add in the tomatoes and sauce to the veggies. Allow a sauce to form and slightly thicken. Add the shrimp back in and cook for about another minute. Remove from heat and serve with suggested garnish and serving options. Enjoy!
