Baba Ghanouj/ Baba Ghanoush Recipe

Ingredients
  

  • 1 large eggplant
  • 1-2 cloves of garlic
  • 3-4 tablespoons of finely chopped parsley
  • 1/2 jalapeño optional
  • 2 1/2 tablespoons tahini sauce
  • 1 lemon juiced
  • 1/3 teaspoon salt or to taste

Serving options:

  • Most commonly eaten with pita bread

Instructions
 

  • Preheat oven to 400 degrees, F. Place eggplant on baking sheet and bake for 30-40 minutes, or until soft. Let cool to touch.
  • Cut the stem from top portion of the eggplant. Slice halfway through in the middle of the eggplant and with a spoon, begin to detach the eggplant flesh from the skin. Discard the skin of the eggplant. Chop the eggplant finely.
  • In a small bowl, add lemon juice to tahini sauce and mix. Add water till desired consistency forms.
  • In another mixing bowl, combine parsley, garlic, jalapeño (if using), and salt. Add tahini mixture, and finely chopped eggplant and mix, adding water if too think.
  • Place on serving plate, add olive oil and vegetables such as tomatoes, cucumber, olives, etc., and enjoy!
