Chili Garlic Baked Tomatoes

Ingredients:
5 firm vine-ripe tomatoes
6-7 garlic cloves
2 jalapenos (I like to use 1 red and one green)
2-3 Tablespoons olive oil
Salt to taste
Equipment:
Mortar and pestle, mini food processor or good quality knife
Directions:
Preheat the oven to 350F
Line a baking tray with parchment paper. Slice the tomatoes into about ½ inch rounds and lay them in a single layer on the baking tray.
Dice up your jalapenos and garlic and add them to either the mortar and pestle or mini food processor. Grind them up with the salt and olive oil until a paste forms. Take about ½ – 1 teaspoon of the paste and spread it on each slice of tomato.
Bake the tomatoes for 30 minutes and broil for between 2-4 minutes. Remove tray from oven, let cool 5 minutes and enjoy. Sahtein!
