Msakhan Rolls – Palestinian Flautas! Leftover Chicken Recipe
Anytime there was leftover chicken or even turkey in our house, I could guarantee these would be made the next day. I looked forward to them so much, I almost enjoyed them better than the original meal! I like to consider these Arabic or Palestinian Flautas. The leftover poultry is mixed with some sauteed onions, salt, pepper and of course SUMAC! Msakhan, the Palestinian national dish, is a roasted chicken covered in sumac (which is the main spice of this dish that you do NOT WANT TO skimp on!) served on a delicious flatbread called Taboon bread, and adorned with carmelized onions and toasted pine nuts. This is a modern and (major) shortcut version made in many Arab households and it works perfectly with leftover chicken or turkey. That first crunch will make you fall in love!
Ingredients:
2 small onions or 1 large onion, diced
2 cups cooked chicken, chopped
2 tablespoons sumac
10 small flour tortillas
Salt and pepper
3 tablespoons vegetable oil
2 tablespoons olive oil
Directions:
Add the olive oil to a medium skillet over medium high heat. Once the olive oil is hot, add the onions and cook until soft and translucent. Add in the chicken and mix with the onions, then add the sumac, salt and pepper and cook for one minute. Remove skillet from heat.
Preheat the oven to 350F
In a 9×13 baking dish, add the vegetable oil to the bottom, spreading throughout the bottom of the dish. Fill each tortilla in the corner facing you with about 2 tablespoons of the chicken mixture. Roll the tortilla, slightly tucking under and place into the 9×13 baking dish with the fold side down. Finish rolling each tortilla and placing them into the dish. Flip around each tortilla in the dish once to coat it with the oil from the bottom, making sure the fold is still tucked underneath.
Bake the whole dish for 30 minutes or until golden brown. Let cool 5 minutes and serve with yogurt and if you enjoy spicy foods, add pickled jalapenos on the side. Enjoy!
