Pasta Fasoul

This was a very common meal on heavy rotation in my household growing up. Throughout the year, my mom would make this and it would come together in no time. I would love eating this with some jalapenos on the side and we’d always have a salad and some pita bread to go along with it. It’s inexpensive, made from pantry staples and the whole family can eat from one pot in under 30 minutes. What could be better than that?
Ingredients:
1 can cannelloni beans, rinsed and drained
¾ cup ditalini beans
1 8oz can tomato sauce
2 cloves garlic, minced
½ or 1 onion, diced
1 tablespoon Italian seasoning or dried oregano
3 cups water
2 tablespoons olive oil
Salt and Pepper to taste
Fresh basil to add in at the end (Optional)
Directions:
Add the olive oil to a medium sauce pan on medium heat.
Add in the onions and garlic. Stir and let cook until translucent. Add in the Italian seasoning or oregano and the salt and pepper. Add in the cannelloni beans and stir with the onions for just a few seconds to warm them up. Being careful not to break apart the beans.
Pour in the entire can of tomato sauce and follow it up with the water – I like pouring the water into the tomato sauce can so I can use up all of the sauce! (If you like this to be thinner, add an additonal ½ or 1 cup)
Let everything come to a boil, then add in the pasta. Cook until pasta is al dente and ready to eat! Add in fresh basil leaves if using!
Serve with bread and a side salad! Enjoy!
