Salatat Hindbeh (Endive Salad)

Ingredients:
1 large bunch endive
3 Tablespoons salt
½ onion (1 one onion if very small), diced
Juice from ½ – 1 lemon
2-3 tablespoons good quality extra virgin olive oil
Salt and pepper to taste
Directions:
Take apart the leaves of the endive, discarding any parts that are limp and discolored. Wash thoroughly and cut into bite size pieces.
Add the washed and cut endives into a strainer sitting inside a large bowl. Add the 3 tablespoons of salt and fully saturate the endive leaves, massaging it with your hands. Let sit for 5 minutes until the leaves wilt slightly.
Rinse thoroughly to remove all the salt and shake to remove excess water. Add the endives to a bowl along with the diced onions. Mix in the olive oil, lemon juice and salt and pepper to taste. Mix well and enjoy! Sahtein!
