Citrus Salsa
This is a delicious summer side for barbecues and picnics
- 3 oranges
- 1 grapefruit
- ½ red onion thinly slices into half moons
- 1 jalapeno deseeded if desired, thinly sliced into discs
- ½ bunch of cilantro chopped
- ½ lime juiced
- Salt and pepper to taste
Remove the rind from the oranges and grapefruit as well as the white veins, being careful to leave the flesh intact. Using a pairing knife or any small knife, segment the oranges and grapefruit by cutting each sliver of flesh out while leaving the veins. Roughly chop all the citrus and add to a bowl.
Squeeze the remaining parts of the citrus – the veins and white parts of citrus – into the bowl and discard once juice is removed. In the bowl with the citrus and juices, add the remaining ingredients and serve with chips, over tacos, with fish or as desired! Enjoy!
