1 ½cupgrated apple – I used one large honeycrisp apple for this amount
For the streusel:
½cupsugar
2tablespoonsflour
3tablespoonscold buttercubed
Instructions
Preheat oven to 375F.
Combine the flour, oats, baking powder, baking soda, salt, pumpkin pie spice and pecans (if using) in a small bowl. Mix well and set aside.
Mix together the milk and apple cider vinegar and set aise for 5 minutes.
Combine the white and brown sugars, eggs, pumpkin puree, vanilla extract, vegetable oil and mix well. Add in the grated apples and the milk and vinegar mixture.
Add the dry ingredients mixture to the wet and combine well being careful not to overmix the batter.
Line 2 cupcake tins with liners or grease each one well. Place an even scoop of the batter into 17 molds. Then mix together the streusel topping by combining all ingredients and smashing the butter into the sugar and flour with a fork. Place ½ teaspoon of the topping onto each muffin. Bake for 22-25 minutes or until a toothpick comes out of the middle of the center cupcakes clean. Let cool 5 minutes and enjoy! Sahtein!
