Banana cookies

Ingredients:
¾ stick of unsalted butter (4 oz) at room temperature
½ cup brown sugar
¼ cup white granulated sugar
1 egg
1 teaspoon vanilla extract
½ teaspoon coconut extract (optional)
2 bananas, mashed
½ teaspoon baking soda
½ teaspoon salt
1 ½ cup + 2 tablespoon flour
1 cup unsweetened flaked coconut (or mix in of choice)

Directions:

-Preheat oven to 350 degrees F

-Combine the butter and both sugars until creamed together. Whisk in the egg and both extracts until well combined and add the mashed bananas.

-Combine the flour, salt and baking soda and fold into the wet mixture using a spatula. Once halfway combined, add in the coconut and continue folding the batter.

-Using a cookie scoop, add dollops of the dough onto a cookie sheet lined with parchment paper leaving at least an inch between each scoop of dough. Bake for 25 minutes or until golden brown on top and the bottom becomes slightly golden brown and enjoy!

  • 1 cup unsweetened flaked coconut or mix in of choice
