Ijjeh – Zucchini Fritters!
Ingredients:
All the insides from 6-7 squash (See Mahshi Video for reference) OR 4-5 whole zucchini, grated
1 onion, diced
1 bunch parsley, chopped fine
½ bunch cilantro (optional)
4 eggs
1 tablespoon cumin
½ teaspoon baking powder
½ teaspoon baking soda
¾ to 1 cup flour
¼ cup water (if needed)
Salt and pepper to taste
Vegetable oil for frying
Directions:
If using whole zucchini, use a box grated to grate the entire zucchini. Use a paper towel over a strainer to remove a bit of the water without squeezing the zucchini too hard. If using the insides of squash, chop them all down into bite size pieces or use scissors to cut them to desired size.
Add in the onion and parsley and mix to combine. Add in the eggs and mix. Add in the flour (starting with ¾ cup), cumin, baking powder and baking soda. Mix well to combine. If the batter is too thin and needs more flour, add in more about 2 tablespoons at a time but no more than 4 tablespoons total. If it becomes too thick, add a touch of water if needed.
Preheat a griddle or a nonstick pan with the vegetable oil to medium high heat. Take 1/3 cup of the mixture and add it to the hot pan. Cook until brown and crispy on the bottom, then flip to cook the other side. Remove from heat and place on heat proof plate lined with a paper towel. Continue cooking using 1/3 cup measuring cup for each fritter until the batter is done. Enjoy with a piece of pita bread or a tortilla! Sahtein
