Strawberries and Champagne Vinaigrette/Salad
Ingredients:
Vinaigrette:
1 pint strawberries, hulled and split into two piles
3 tbspn champagne vinegar (can substitute for white wine vinegar, white balsamic or regular balsamic)
1 tspn dijon mustard
1 tspn honey
3 tbspn olive oil
1 tbspn Italian Seasoning (can substitute for 5 fresh basil leaves or mint leaves)
Salt and Pepper to taste
Salad:
8 oz mixed greens
2 Persian cucumbers, cut into half moons
1 oz feta or goat cheese
½ cup sliced almonds or pecans
(Optional) Slices of seared spiced chicken breast – find a recipe for this in my Mediterranean chicken salad recipe
Directons:
-Take one pile of the strawberries and slice them all in half. Add to a food processor and blend for about 30 seconds or until a puree begins to form. Add the rest of the vinaigrette ingredients and blend until desired consistency is reached. Set aside.
-Slice the remainder of the strawberries into 3 slices a piece. In a platter, add your mixed greens and the rest of the salad ingredients along with the sliced strawberries. Top with the chicken if using and drizzle on the vinaigrette. The rest of the vinaigrette will last in the fridge for 3-4 days.
