Watermelon Halloumi Caprese

Ingredients:
3 cups watermelon, cut into bite size pieces
1 package (8 oz) halloumi cheese, cut a bit smaller than the watermelon slices
1 cup fresh mint leaves
1 cup fresh basil leaves
3 tbspn olive oil (If frying the cheese)
Directions:
– (If frying the cheese, follow these directions, otherwise skip to next step) Heat olive oil on medium in small nonstick skillet. Add the slices of halloumi cheese and fry until golden brown. Flip and fry on the other side until golden brown. Remove from heat onto paper towel lined plate and set aside.
– In a serving platter, lay slices of watermelon down followed by a slice of the halloumi on top and finish with one basil and one mint leaf. Continue layering until platter is covered or you run out of ingredients. Optional: Serve with a side of balsamic glaze, and drizzle olive oil.
