Chewy Gingerbread Cookies

Ingredients:
¾ unsalted butter, softened at room temp (You can use salted butter as well, just eliminate the added salt)
1 cup sugar
1 egg
1 tablespoon water
¼ cup molasses
Zest from ½ orange
2 ¼ cup flour
¼ teaspoon salt
1 teaspoon baking soda
2 teaspoons ginger powder
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice (or substitute for ½ teaspoon nutmeg and ½ teaspoon cloves, or leave out entirely)
Optional: Additional sugar to roll the balls of dough before baking
Directions:
In a medium mixing bowl, cream together the butter and sugar until well combined. Then add in the egg, molasses, water and orange zest. Mix well to combine.
Mix together all the flour, salt, baking soda and spices and add them into the wet ingredients. Use a spatula to mix being careful not to overmix. Place the mixture in the fridge to cool for about 20-30 minutes.
Preheat oven to 375.
Using a cookie scoop, add dollops of dough onto a parchment lined baking sheet. If desired, roll each ball of dough into sugar before placing on the baking sheet. Bake the cookies for about 10 minutes or until the bottom develops a golden color. Enjoy!
