Halloween Snacks – Middle Eastern Style
Frankenstein Haunted Hummus
Ingredients:
1 recipe cilantro jalapeno hummus (Recipe here: https://youtu.be/3mngMKr6itM)
½ raddish cut into slices
1 pickle
handful of pitted black olives
½ carrot
1 tablespoon olive oil
1 teaspoon paprika
1 green onion
slice of lemon
Directions:
Spread the hummus onto a platter in the shape of a rectangle. Place two slices of raddish as the eyes and top it with two rounds of olives as the pupils.
Using a spoon, make an indent above the raddish eyes creating a pocket to place the olive oil. Top the olive oil with the paprika to resemble hair. Chop the remainder of the olives and sprinkle atop the olive oil and paprika to give the hair texture.
Place the pickle as the nose. Cut the carrots into thick juliennes and place one as the mouth. Cut one julienne strip into 4 pieces and lay them perpendicular to the mouth to resemble the stitched mouth of Frankenstein.
Cut the lemon slice in half and one green onion in half. Lay them towards the bottom of Frankenstein to resemble the screws in his neck. Place the lemons on the outer half of the green onions. Enjoy!
Ricotta Stuffed Date Roaches
Ingredients:
6 dates
3 tablespoons ricotta cheese
¼ cup fresh squeezed orange juice
½ teaspoon vanilla extract
6 pistachios
6 chocolate chips
Directions:
Mix together the ricotta cheese, orange juice and vanilla extract. Set aside.
Carefully take each date and make three slits along both sides of each date using a pairing knife. These will act as the legs on a roach. Flair out each slit as you make them, so the legs can stick out. Make one long cut lengthwise and carefully remove the pit from each date.
Stuff each date with a ½ – 1 teaspoon of the ricotta mixture and top with a pistachio cut in half to act as the eyes and one upside down chocolate chip is the mouth. Enjoy! (These are my favorite!)
Labneh Ghost Toast
Ingredients:
1 slice bread/toast
2 tablespoons labneh (or cream cheese)
½ raddish, sliced
1 green or black olive
1 slice of julienned carrot
1 slice tomato cut into half moon shape
1 tablespoon zaatar
Directions:
Spread the labneh on the toast. Top with two slices of raddish topped with two slices of the olive to resemble eyes. Place the half moon tomato upside down as a scared face.
Sprinkle the zaatar above the eyes. Cut the slice of julienned carrot in half and place on both sides of the toast to look like arms.
