Chocolate Mint/Thin Mint Brownies
Ingredients:
-1 Stick (or ½ cup) unsalted butter, room temperature
-6 oz dark mint chocolate (about 50%), melted
-1/2 cup sugar
-2 eggs
-1 teaspoon vanilla extract
– ½ teaspoon peppermint extract
-1/2 teaspoon salt
-1 tablespoon cocoa powder
-1/2 cup flour
Directions:
-Preheat oven to 350 F
-Combine butter and sugar. Whisk or use standing mixer to combine until well incorporated. Add in eggs, vanilla extract and peppermint extract, mix well. Stir in melted chocolate and combine.
-Mix all dry ingredients together (flour, cocoa powder and salt). Add to wet ingredients being sure not to overmix.
-Place parchment paper over an 8×8 baking dish. Add brownie batter to baking dish, bake for 35 minutes or until a toothpick placed in the center comes out with little wet crumbs. Remove from oven, let cool for 10 minutes, cut into bite size pieces and enjoy!
