The BEST Tomato Jam – Nordstrom Style Tomato Jam Jar

I love going to Nordstrom – not only for the shopping but for their café! Each store can sometimes vary with what is offered. For instance, since I moved to Florida, the Nordstrom in my city offers beignets which I don’t remember on the menu at any locations in my hometown of San Diego. One constant seems to be these tomato jam jars. I’m not sure if these are still offered but MAN are they good. The sweet and slightly tangy tomato jam pairs so perfectly with the freshness of the basil pesto and creamy ricotta cheese. I’m sharing with you how to make the super simple tomato jam in this recipe. You can absolutely use a homemade pesto if you’d like or a store-bought one like I am using today. Spread this delicious layered dip on some crusty bread and it’s the most delicious appetizer, snack or addition to your entertaining table. You can even use this to top chicken or some homemade burgers! The best part is, it can also be made a day or two in advance! Ingredients:
1 tablespoon olive oil
6 roma tomatoes, large dice – totaling about 2 ½ cups
2 garlic cloves, minced
3 tablespoons granulated sugar
2 tablespoons apple cider vinegar or balsamic vinegar
6-10 basil leaves, chopped
Salt and pepper to taste
For the tomato jam jars:
¼ cup ricotta cheese
3 tablespoons pesto – homemade or store-bought
Jar or bowl for serving
Crusty bread for dipping and spreading
Directions:
Heat a medium saucepan to medium high heat. Add in the olive oil and the diced tomatoes. Once the tomatoes start releasing lots of their liquid – should take just a couple minutes, add in the garlic, sugar and vinegar. Cook down for a couple minutes, then add in the basil.
Cook until the mixture begins to thicken to desired consistency – I usually cook mine for about 12 minutes or until when you drag a wooden spoon through the mixture, it stays split for a second or two. Let the mixture cool or at least come to room temperature. This portion can be done 1 or 2 days ahead.
To assemble the jars, begin with a small clean jar or serving bowl. Add in the ricotta cheese. Top the cheese with the pesto and top the pesto with the tomato jam. Dip in some crusty bread and enjoy!
