Curry Chicken Salad

Ingredients:
1 rotisserie chicken, meat shredded (about 4 cups)
¾ cup mayonnaise
1 heaping teaspoon curry powder
½ cup golden raisins
½ chopped pecans or slivered almonds
2 stalks celery, finely diced
½ teaspoon honey
½ cup (from ½ bunch) fresh parsley, chopped – or any other herb you like!
Salt and pepper to taste
Directions:
Mix together in the chicken, celery, golden raisins and nuts in a large bowl.
In a small bowl, make the dressing by combining the mayo, curry powder, honey and salt and pepper if using. Add to the bowl with the rest of the ingredients. Add in the parsley and mix. Let sit in the fridge for at least 30 minutes for maximum flavor. Sahtein!
