Bruschetta Pasta (No Cook Sauce)
Ingredients:
½ lb cooked spaghetti pasta ( ½ box)
1 pint heirloom cherry tomatoes
3-4 cloves garlic
4 tablespoons olive oil
1 tablespoon Italian seasoning
1/3 cup (or more) fresh grated Parmiggiano Reggiano
Handful fresh basil leaves
Small handful fresh parsley
Salt + Pepper to taste
Directions:
Bring a large pot of water to boil. Add salt for flavor and cook the pasta according to package directions
While the pasta cooks, assemble the sauce by halving or quartering the cherry tomatoes, very finely dice or grate the garlic, chop up the fresh herbs and add it all to the bottom of a serving bowl along with the olive oil, salt, pepper, and Italian seasoning (Save the Parmiggiano for after). Mix the ingredients together to combine and set aside.
Once the pasta is fully cooked, Add the pasta from the pot directly into the serving bowl – if some pasta water makes it in the bowl, it is perfectly fine. Once all the pasta is in the bowl, before you toss it add in the fresh Parmiggiano on top of the warm pasta, then stir from the bottom to combine the pasta with the sauce. Serve warm, room temp or cold. Enjoy!
