Middle Eastern Style Savory Oatmeal

Ingredients:
2 tablespoons olive oil
1 onion, diced
1 clove garlic, minced
1 tomato, diced
½ teaspoon allspice
¼ teaspoon turmeric
pinch nutmeg (about 1/8 teaspoon)
Salt to taste
1 ¾ cup water
2 cups old fashioned oats (or oats of choice – but not quick cooking oats)

Toppings:
sautéed pine nuts or slivered almonds
Simple middle eastern salad or chickpea salad

 Directions:
In a medium saucepan on medium heat, add the olive oil and onions. Cook till translucent, then add garlic. Once garlic is fragrant, add salt and all spices to pot and cook for about 30 seconds to 1 minute.

Add in the tomatoes to help deglaze the pan and let the tomatoes, onions and garlic cook for about 4-5 minutes until they all thicken up. Once they thicken up, add in the water and let it come to a boil to create the broth.

Once the broth is to a boil, add in the oatmeal, reduce the heat to medium low and let the oats cook for about 5 minutes or until desired doneness. Remove from heat and serve with suggested toppings and enjoy!

Middle Eastern Style Savory Oatmeal

I've been seeing a lot of versions of a savory oatmeal and thought why not come up with a Middle Eastern version of it.
