Meal Plan 2: January 8-14
Monday: Mediterranean stuffed zucchini boats with some Arab rice pilaf and tzatziki sauce. Serve with a simple salad or horiatiki salad! Can’t think of a better way to start the week!
Tuesday: Peanut noodle salad. This gets even better as it sits!
Wednesday: Lemon chicken orzo soup, bright and colorful. Perfect for a mid-week pick me up.
Thursday: Butternut squash mac and cheese because we could all use some comfort food in our lives in the form of any mac and cheese.
Friday: Chicken Cacciatore. Hearty and rustic. Most of the time to make this meal is hands-off which is ideal for the end of the week!
Saturday: Make some chicken cacciatore manicotti with the leftovers from the day before!
Breakfast: Spanakopita quiche. This has been on my mind and I can’t wait to make it! All the flavor of a spanakopita in a delicious, savory breakfast dish.
Dessert: Vegan almond joy cookies. SO easy to make, dairy free and made with almond flour!
