Meal Plan 21: October 2-8

Monday: Mediterranean stuffed zucchini boats. Simple and flavorful, perfect to kick off the week!

Tuesday: Mexican chicken and rice soup, this week’s newest recipe is sure to keep you feeling cozy.

Wednesday: Aush reshteh for a Persian, vegetarian answer to soup season.

Thursday: Blackened salmon with walnut date gremolata for simple, feel-good yet cozy meal. Serve this with a salad and some rice or crusty bread

Friday: Peanut noodle salad for a refreshing and simple lunch/snack to keep on hand.

Saturday: Invite some friends or cousins over and make a huge batch of wontons for wonton soup! These make a great and super speedy freezer staple for future meals! Or fry them up for quick appetizers!

Breakfast: Fuul Mudammas is sure to hit the spot, especially on a Sunday morning. With fried ackawi cheese, and tons of pickles and labneh. YUM

Dessert: Pumpkin apple muffins! These have been on my radar for the last few weeks, I can’t wait to make them!
