How to make date caramel (Easy 4 ingredients!)

Date caramel is a delicious, naturally sweet, and super easy-to-make alternative to traditional caramel sauces. It’s made with 4 simple ingredients and has a luscious, caramel-like texture that you’ll want to drizzle over everything. The best part? It’s healthy and requires no refined sugar!

What is date caramel?

Date caramel is basically a smooth, rich sauce made from blended dates that delivers all the caramel vibes without any processed sugar or butter. When blended with a bit of non-dairy milk, it transforms into a smooth, thick, caramel-like texture that’s perfect for all sorts of dishes. It’s sweet, rich, and has that natural caramel flavor without any artificial ingredients which makes it one of the best sweeteners you can use for just about anything. All you need is a little pure vanilla extract (or vanilla bean paste), a pinch of salt, and a high-speed blender!

I love to use this on pretty much anything: for dipping fresh fruit as a healthy snack, stirred into nice cream, spread on cookie bars, or even paired with a little dark chocolate for that extra indulgent touch. It’s also a fantastic dip for apple slices or a sweetener for any drink. And the best part? You can customize it to your taste—add a spoonful of peanut butter for a nuttier version or a dash of cacao powder for a chocolatey twist.

But first, let’s talk about the main differences between Medjool dates and regular pitted dates, because the type of date you use in your date caramel can make some much difference in the flavor and texture of your sauce and dates are the star of the show here!

There’s a ton of variety of dates, but Medjool tends to be most popular. Medjool dates are known for their large size, soft texture, and caramel-like flavor. They’re dark brown with a thin skin and can easily be split open to reveal their sticky-sweet texture. These are often considered the best dates for making homemade date caramel because they blend into a super smooth sauce that mimics traditional caramel. They’re also higher in natural sugars, which gives them a sweeter, richer taste—perfect for sauces, desserts, and snacks. Medjool dates are native to the Middle East but are also grown in the United States, making them widely available in grocery stores.

Medjool dates are packed with fiber, potassium, and a variety of vitamins and minerals, including vitamin B. They’re a fantastic natural sweetener, and because they have a low glycemic index, they won’t cause the same blood sugar spikes as refined sugar. So, not only are they delicious, but they’re also great for keeping your immune system in check!

On the other hand, regular pitted dates have a more firm texture and are slightly smaller and drier compared to Medjool dates. Although they’re still dates and have some of the same benefits, pitted dates just are not the same quality. They don’t have as good or fresh of a flavor or natural sweetness, they have a more chewy texture and they’re nowhere near as caramely. I always recommend pitted dates – even if you’re not making date caramel, because they’re just better overall. 

So, if you’re aiming for that smooth, caramel-like texture, Medjool dates are the best way to go. They’re easier to blend and provide a richer flavor that you just wouldn’t achieve with store-bought pitted dates. I like to get mine from my local Arab/ Middle-Eastern store. They can usually be found in cardboard boxes and are best stored in an airtight container on the counter or in the fridge.

How to make date caramel

Making date caramel sauce is so wildly simple. The hardest part is really cleaning out the blender (which we all know is a task in itself) – so I’ve learned to always make enough to last about 1-2 weeks at a time. 
Here’s what you’ll need:

  • Mejdool dates: WITH the pit! I cannot stress this enough. The type of date you use will make a huge difference in the final product. Definitely use Medjool dates with the pit. 
  • Coconut milk (you could also use another non-dairy milk of choice like almond milk or soy milk OR the water from soaking the dates)
  • Vanilla bean paste (vanilla extract also works, but I love using the paste here and seeing the specks of vanilla)
  • pinch of salt to balance out the sweet taste
  • Hot water (just enough to soak the dates)

First, remove the pits from your Medjool dates and place them in a shallow bowl. Soak your pitted dates in hot water for about 10 minutes to soften them. This makes it easier for your food processor or high-speed blender to turn them into a smooth caramel sauce.

Use tongs to move the soaked dates into the blender – reserve the water that it soaked it. You can drink it as is, or add it to coffee or tea. This has similar benefits to the dates themselves plus a nice subtle sweetness. Add in the coconut milk, vanilla bean paste, and a pinch of salt.

Blend on high until you get a smooth texture. Stop once in between to scrape down the sides of the blender. If needed, add a little more coconut milk or date water to reach your desired consistency.

Transfer the date caramel sauce to an airtight container, sprinkle with a bit extra salt if desired, and refrigerate it for up to 2 weeks. 

Can you freeze date caramel?

Absolutely! If you want to make a big batch and save some for later, you can definitely freeze date caramel. Just pour the sauce into an airtight container and freeze for up to three months. When you’re ready to use it, simply thaw it in the fridge overnight, or let it sit at room temperature until it softens. A quick stir will bring it back to its original, creamy state.

How to use date caramel

I’m telling you, this date caramel sauce is good on everything. Here are a few of my favorite ways to enjoy it for the next time your sweet tooth strikes:

  • Use it as a dip for apple slices for a quick, sweet snack that tastes like dessert. You can even swirl it with some almond butter! My kids LOVE this combo.
  • Stir it into ice cream or layer into parfaits for a caramel-like swirl
  • Use it as a topping for oatmeal, pancakes, French toast or even as a dip for cookie bars.
  • Swirl it into dark chocolate and nut butters to make an insanely good treat.
  • It even would make a great addition to a cheese board

Basically, anywhere you could use caramel, you can use this! They’re totally interchangeable. 

There’s always a good reason to make date caramel. If you’ve been trying to cut back on refined sugar, or if you just love the caramel-like taste and want to try something different, this date caramel sauce is such a game-changer. The natural sweetness from the dates make it taste indulgent, but it’s all good-for-you ingredients. And honestly, there’s just something so satisfying about making your own smooth caramel at home. Use this as a substitute for caramel. Its easy to make, stores beautifully in the fridge and tastes amazing on everything!

Ingredients
  

  • 20 medjool dates
  • ½ cup unsweetened coconut milk
  • 1 teaspoon vanilla bean paste or vanilla extract
  • ¼ teaspoon salt

Instructions
 

  • Bring a small pot of water to a boil. Remove the pits from the dates and place them in a shallow, heat proof bowl. Pour enough hot water over the pitted dates to cover them completely and let them soak for 15 minutes or until softened.
  • After the dates have soaked, use tongs to move the dates from the bowl to a blender. Reserve the water the dates have soaked in – this can be used as a liquid sweetener for things like drinks, smoothies, etc.
  • Add the coconut milk, vanilla bean paste and salt. Blend it up and scrape down the edges of the blender halfway through blending. Add more coconut milk or date water to reach desired consistency. It should be thick and smooth.
  • Store the date caramel in an airtight container in the fridge for 1-2 weeks or in the freezer for up to 3 months. Use it any way you use caramel – coffee, pancakes, French toast, cheesecakes, dips for fruits or pretzels, mix with chocolate or nut butters. The possibilities are endless! Enjoy!
