Arab Breakfast Strata
Ingredients:
3 sesame seed bagels (or everything bagels), diced
2 tomatoes, diced
10 oz Ackawi cheese (or Nabulsi cheese, or feta), diced
8 eggs
2 cups milk of choice
½ cup fresh parsley, chopped
6 fresh mint leaves, chopped
3 green onions, chopped
3 teaspoons za’atar
1 teaspoon paprika
½ teaspoon garlic powder
Salt and pepper to taste
Optional: Chopped pitted olives, shredded cheese for the top
Equipment:
9×13 baking dish
Directions:
In your 9×13 baking dish, add In the diced bagels, Ackawi cheese and tomatoes and mix so everything is well dispersed.
In a mixing bowl, add in all your eggs and whisk to break the yolks. Add in the milk along with all the herbs and spices and whisk well to combine making sure everything is incorporated and there are no clumps of spices. Pour this mixture into pan over the bagels, tomatoes and cheese making sure the bagels are fully saturated. (You can bake this now and move to the next step but I think this works even better after being covered and sitting in the fridge overnight).
Remove baking pan from fridge (if you let it sit overnight) and preheat oven to 375 F. Bake the Strata for 45 minutes or until the cheese is bubbly and the top is golden brown – you can broil it for 2-3 minutes if desired. Remove from oven, let cool 10 minutes and serve! This is great warm or even room temp. Enjoy!
