Meal Plan 23: October 16-22
Monday: Blackened salmon with walnut date gremolata to kick off the week on a light and delicious note.
Tuesday: Spicy korean silken tofu soup. This is absolutely amazing and comes together in less than 30 minutes. Sometimes I’ll even make this late at night when I need a simple bowl of comfort. Always with plain white rice.
Wednesday: Msakhan rolls. Easy to make with leftover chicken or a rotisserie! Enjoy with some plain Greek yogurt, pickled jalapeños, and a simple salad.
Thursday: Greek chicken with tzatziki sauce. A serious staple around here. Make sure to enjoy it with some Greek rice pilaf and horiatiki salad.
Friday: Italian white bean soup with butternut squash and kale. SO good with some crusty bread, especially if you add some gouda cheese to it!
Saturday: Easy Greek Moussaka. This seriously HITS the spot, we had this for dinner last night so it prompted me to put it in this week’s meal plan!
Breakfast: Easy Chilaquiles. SO GOOD!
Dessert: Simple apple cake. It’s apple week over here!
Drink: Enchanted Orchard Apple Cider Cocktail is sure to put you in the fall mood!
