Chipotle Lime Chicken with Cilantro Honey Yogurt Sauce

Ingredients:
For Chipotle Lime Chicken
3 chicken breasts cut into 1 inch pieces
1 medium onion, sliced thinly into half moons
2-3 tomatoes, diced
3 chipotle peppers with adobo sauce, chopped fine
¼ teaspoon cayenne pepper (optional)
½ teaspoon each garlic powder, onion powder, smoked paprika
1 teaspoon each cumin, chili powder, turmeric
1 tablespoon each paprika, oregano
1/2 -1 lime, juiced
¼ cup water – if needed (I did not use in my video)
½ bunch cilantro, chopped for topping
2 tablespoons olive oil
Salt and pepper to taste
For Cilantro Honey Yogurt
1 cup yogurt (Regular or Greek yogurt – not flavored)
1 tablespoon honey
½ cup cilantro leaves
Salt and pepper
Directions:
For the chicken, heat olive oil on a medium pan over medium-high heat. Add all the spices to the chicken and mix until the spices fully coat each piece. Add the chicken in one layer into the heated pan and let sit for 2 minutes until color stars to develop on the bottom. Mix after 2 minutes.
Once chicken is about halfway cooked, add the onions, tomatoes and chipotle peppers. If you’d like a thinner consistency, add a bit of the water until desired consistency is achieved. Mix until the chicken is fully cooked and no longer pink. Add the lime juice and cilantro. Set aside.
For the yogurt sauce, in a food processor, blend the cilantro until slightly chopped. Add the remaining ingredients and blend until fully combined. Serve the chicken with the sauce over tacos, with rice, with scrambled eggs as breakfast tacos or as desired. Enjoy!

- 1/2 -1 lime juiced
