Meal Plan 1: January 1 – 7, 2023!
Happy New Year!! I’m so excited for what this year has in store and can’t wait to share more with you! Let’s get this first meal plan of the year on the road!
Monday: Italian white bean soup with kale and butternut squash. Super light and filling to start off the week. I love this soup so much and it’s delicious with a bit of crusty bread on the side for dunking.
Tuesday: Greek chicken with tzatziki sauce, horiatiki salad and some Greek rice. This meal is always a hit for us.
Wednesday: Freekeh salad with shrimp, corn and middle eastern chimichurri. Jam packed with nutrients just as much as it is with color and flavor.
Thursday: Mediterranean lentil soup. One of my favorite lentil soups of all time! Flavorful, comforting and filling. All the things we love and perfect for the new year!
Friday: Roasted lemon garlic salmon with herby vinaigrette. It’s colorful and eye catching plus DELICIOUS. So good with some rice or roasted potatoes.
Saturday: Make a big Mediterranean chicken salad to enjoy!
Breakfast: Spanakopita quiche. So easy and the leftovers are great for a snack or breakfast the next day.
Dessert: Trembleque – Coconut pudding. Dairy free, super simple and a nice little sweet treat to have on hand.
Drink: Green juice. Okay, yes this post needs a major update. But overall I still make my green juice the same exact way as I have for the last decade+ with the same machine I shared in the video!
