Meal Plan 13: August 7 – 13

Monday: Mediterranean stuffed zucchini boats are super quick for a weeknight meal and very filling. I love pairing this with tzatziki sauce and a simple salad or horiatiki salad.

Tuesday: Summer rice salad is such a go to during these warmer months. It’s just too good to pass up!

Wednesday: Pasta fasoul. Quick and inexpensive. Also a little on the cozy side for all those inquiring about Autumn recipes – which are coming soon!

Thursday: Pan seared chicken with fig jam and soy glaze. We got a couple recipes this week featuring fig jam. I just love it!

Friday: Blackened salmon with walnut date gremolata. Truly one of my favorite ways to enjoy salmon.

Saturday: Fig jam and goat cheese burgers with arugula and bacon. The flavor combo here is 10/10.

Breakfast: The BEST fluffy pancakes! Me and the family truly cannot get enough of these. They’re such a fun and delicious weekend breakfast! Serve these with some fresh fruit, eggs and other traditional breakfast items for good measure!

Dessert: Nescafe cake! So easy and requires minimal effort. The hardest part about this recipe is waiting for it to set in the fridge before digging in.
