Meal Plan 24: October 23 – 29
Monday: Chicken fajitas with some tortillas, salsa, pico de gallo, guacamole and definitely some pickled carrots are calling my name
Tuesday: Mediterranean style lentil soup. One of the most popular soups on this site! And for a good reason.
Wednesday: Spinach and ricotta stuffed shells for a quick and delicious vegetarian meal!
Thursday: Suniyet djaj. Chicken spiced to perfection and roasted with potatoes and onions. Enjoy with Arab rice pilaf and a simple salad.
Friday: Mediterranean shrimp with tomatoes and feta. We always tend to eat seafood or vegetarian on Fridays, so naturally I had to share this delicious, simple dish! Enjoy with a horiatiki salad and Greek rice pilaf!
Saturday: Braised short ribs with creamy polenta. If you haven’t made these yet, consider this your calling. They’re just AMAZING!
Breakfast: Make some pumpkin butter and make this Pumpkin butter French toast with pumpkin apple syrup! It’s the right move for a fall weekend!
Dessert: Pumpkin roll cake with orange spice cream cheese filling to pump up that pumpkin and pre-halloween spirit!
