Mediterranean Stuffed Zucchini Boats

Monday: Roasted lemon garlic salmon with herby vinaigrette to start the week off fresh and light

Tuesday: Mediterranean stuffed zucchini boats with rice pilaf and simple salad for a simple, healthy and filling meal

Wednesday: Italian white bean soup with butternut squash and kale because we need some comfort in these cold nights!

Thursday: Mujaddara for a simple mid week meal

Friday: Mediterranean shrimp with tomatoes and feta with Greek rice pilaf and horiatiki salad. Flavorful and colorful, my favorite kind of meals.

Saturday: Braised short ribs with creamy polenta to prepare our tummies for a week of decadence. Don’t forget to turn the leftover short ribs into a pappardelle pasta! My fave

Breakfast: These easy chilaquiles always hit the spot

Dessert: Spiced pumpkin puff pastry squares
