Meal Plan 12: July 31 – August 6
Monday: Creamy tomato and white wine chicken. I started making this when I was still in college at SJSU. This was one of my GO TO meals. I loved making it with pasta but I can also see it being delicious with some mashed potatoes! My cousin makes this very often and whenever she does, it reminds me how amazing this meal is!
Tuesday: Tuna sandwiches are calling my name! If you haven’t tried these tuna sandwiches, they’re literally the best EVER. Not super filled with mayo like the typical tuna salad, this one is loaded with veggies and texture!
Wednesday: Mediterranean chicken salad. Still very much a favorite of mine! I created this with one of my favorite restaurants – True Food Kitchen in mind. They have a salad similar to this one so I decided to try my hand at it. And if you’ve never had quinoa on a salad, let this be your calling!
Thursday: When its the home stretch for the middle of the week, you just need something quick that you really don’t need to think too much about. Mujaddara is that meal for me. Pair it with some plain yogurt, pickles and a simple salad, you’re all set! Inexpensive, quick and nutritious!
Friday: Shrimp and mascarpone pasta with arugula. An easy and delicious way to start the weekend!
Saturday: Hop on the grill and make yourself some pollo asado tacos with mango salsa and chipotle crema. Add to it some pico de gallo, some black bean, corn and jicama salsa and if you want to get a little extra crazy, some shredded chicken empanadas with chimichurri! It’ll be a very happy weekend and I’ll be patiently waiting for my invite.
Breakfast: Mexican breakfast skillet! Turn these into breakfast tacos or burritos with some cilantro, avocado, yogurt or crema and some hot sauce. SO filling and absolutely delish!
Dessert: Berry cheesecake icebox cake. This no bake dessert has been super popular! Be sure to make this for the week and enjoy in the beautiful, warm weather!
