Greek feast. mediterranean shrimp, greek rice pilaf, greek salad and tzatziki

Monday: Greek chicken with tzatziki sauce, horiatiki salad and Greek rice pilaf is just calling my name. Start the week of right with all those bright beautiful colors!

Tuesday: Creamy tomato skillet chicken and spinach. LOVE this over any pasta!

Wednesday: Grab a rotisserie chicken from the store and whip up some msakhan rolls! Literally cannot get more simple than this! And everyone loves them! I love these with Greek yogurt and pickled jalapanos or shatta!

Thursday: My new shrimp mascarpone pasta with arugula is sure to be the star of your dinner table this Thursday!! Serve this with some blistered lemon parm green beans!

Friday: Veggie lettuce cups is the right move for Friday. Flavorful, light and full of texture. Add some rice on the side to make it eat like more of a meal!

Saturday: Light up the grill and make some chicken kebabs with some Middle Eastern potato salad and simple salad on the side!

Breakfast: Make yourself a spanakopita quiche that you can keep coming back to through the week! We love this – even the kids!

Dessert: Nescafe cake! Literally addictive and NO baking is involved! Count me in!
