Meal Plan 7: February 12 – 18
Monday: Chicken marsala! Trust me when I say you’ll never feel the need to order this out again when you see how easy it is to make.
Tuesday: Loubia bil zeit – simple long bean stew. If you can’t find long beans, French green beans are the next best bet. I always serve this with a side of Arab rice pilaf and if you like some spice, a fresh jalapeno on the side!
Wednesday: Orange chicken stir fry! I like to the get the chicken super crispy to add more texture. You can also use strips of chicken instead if you prefer. Served with some plain white rice and some sambal of course.
Thursday: Mediterranean stuffed zucchini boats with some Arab rice pilaf and simple salad. A complete and delicious meal!
Friday: Blackened salmon with walnut date gremolata. Roast up some potatoes on the side for a little extra somethin!
Saturday: Maftoul – The Palestinian chicken soup with pearl couscous! One of my top 3 favorite comfort foods.
Breakfast: Spanakopita quiche. A favorite around here!
Dessert: Apricot mabroosheh – Jam bars. I love to mix a bit of rose jam in here as well which you can find at your local Arab grocery store.
