Spanakopita Quiche

Monday: Roasted lemon garlic salmon with herby vinaigrette with lemon ricotta and herb stuffed mushrooms

Tuesday: Pollo asado tacos!

Wednesday: Chicken shawarma bowls – can’t wait to make these!

Thursday: Shrimp and mascarpone pasta with arugula! A simple and beautiful Springtime meal

Friday: Baja fish tacos – my most popular recipe on Pinterest!

Saturday: Greek feast! Greek chicken, horiatiki salad and Greek rice pilaf

Breakfast: Spanakopita quiche – one of my favorites!

Dessert: White chocolate raspberry muffins which can also double as breakfast!
