Meal Plan 4: January 23-28
Monday: Chipotle lime chicken with cilantro honey yogurt sauce. The colors of this dish are as bright as the flavors. So good with a black bean, jicama and corn salsa, some tortillas or rice!
Tuesday: Light tuna salad is the perfect thing to keep in the fridge for snacks on top of cracks or adding to sandwiches or salads.
Wednesday: Go Greek with my Greek chicken and tzatziki sauce, horiatiki salad and Greek rice pilaf.
Thursday: Continue the Greek theme with this Moussaka! So good with some rice on the side and maybe any horiatiki salad you may have left over!
Friday: Still drooling over this pan seared salmon with fennel orange salad and roasted potatoes. If you haven’t made it yet, now is the perfect time! The entire recipe is up on one post!
Saturday: Chicken cacciatore! Simmers for a while and makes the house smell so comforting.
Breakfast: Easy chilaquiles may not be super traditional, but they are super delicious!
Dessert: Banana coconut cookies! They have fruit, so they can also be considered breakfast, right? Right!
